Where does the uniqueness of Colombia Supremo Popayan come from?

From traditional plantations, located at 1600m a.s.l.in the Cauca w Triángulo del Café region, listed by UNESCO. Harvesting by hand, segregation, wet processing, and bean drying processes, unchanged since the 19th century. Total completeness – a balance between a full body, subtle bitterness, and a mild taste of acidity.
